sorry for the delay on this one but life's been pretty hectic now that we are back at school!
Thanksgiving is one of my top 8 favorite holidays!! Love the family, love the food, love everything!! and it means that I get to go Black Friday shopping (which is also a top 8 holiday!)
Sooo in the Loux household Thanksgiving means having a very large crowd which is so fun but it also means a whole lot of cooking! Normally I try and do what most do and dogde and hide any task that I can esp cooking but seeing as how I have a cooking blog there wasnt much avoiding it this year. But I was actually pretty excited to learn some of the family recipes!
The way we do cooking for large crowds is everyone involved kind of just does whatever is needed but you are pretty much "in charge" of a few things. This year I was put in charge of the corn, the brie and the apple pie. So I seriously worked my inner food network chef and was super busy!
BAKED BRIE WITH CARAMELIZED ONIONS
The brie is a staple at any Loux event, I've grown up eating it and it is quite possibly one of my favorite dishes that my mom prepares. No pressure!
Here is the recipe from epicurious.
Ingredients
- 2 tablespoons (1/4 stick) butter
- 8 cups sliced onions (about 4 large onions)
- 1 tablespoon minced fresh thyme
- 4 garlic cloves, chopped
- 1/2 cup dry white wine
- 1 teaspoon sugar
- 1 8 inch 32-36 ounce French Brie, packed in wooden box
- 2 French baguettes, sliced
Slice onions.
Melt butter in a large skillet over medium high heat. Add onions and saute until just tender, for about 6 minutes.
Add minced thyme.
Reduce heat to medium and cook until onions are golden, stirring often for about 25 minutes.
Add garlic and saute for another 2 minutes.
Add 1/4 cup of wine, stir until almost all liquid evaporates for about 2 minutes.
Sprinkle sugar over onions and saute until soft and brown, about 10 minutes
Add remaining 1/4 cup of wine, stir until liquid evaporates, about 2 minutes
Season to taste with salt and pepper. Let cool.
Onions can be prepared 2 days ahead of time, put into tupperwear and refrigerate.
Preheat oven to 350.
Cut rind off brie on top and sides.
Place brie in bowl and place on baking sheet.
Bake brie for about 20 minutes then top with onions and bake for about another 10 minutes so that onions are hot and cheese is melted
Serve with baguette slices!

BOURBON CREAMED CORN
when my mom put me in charge of the corn, she handed me a recipe for normal cream corn and this recipe from bon appetit. Obviously I went for the bourbon but decided to leave out the red peppers!
This recipe was super super delicious and super super easy!
Ingredients
- 1/4 cup (1/2) stick butter
- 1 cup chopped shallots
- 3 garlic cloves, minced
- 3 cups fresh corn kernels (cut from about 5 ears)
- 2/3 cup whipping cream, divided
- 1/4 cup bourbon
- 1 cup chopped green onions (about 6)
Melt butter in large skillet over medium high heat.
Add shallots and garlic, saute for 2 minutes.
Add corn and saute until almost tender; about 2 minutes
Add 1/3 cup cream and the bourbon. Simmer until sauce thickly coats corn, stirring occasionally; about 2 minutes.
Add remaining 1/3 cup of cream and green onions. Simmer until sauce thickens to coat corn thinly; about 2 minutes longer.
Season to taste with salt and pepper.
APPLE PIE
As my mom and I were buying ingredients at Whole Foods, I realized there were no ingredients for a dessert. She informed me that people were bringing desserts (pecan pie and pumpkin pie). No offense to the people that prepared them or these desserts in general but I am an apple pie girl to the heart and I was NOT ok with not having one on Thanksgiving like we traditionally do. So I took it upon myself to make one.
When looking for a recipe I decided to go with Paula Deens Mom's Apple Pie, because she is after all the queen of southern cooking! I almost didn't go with hers for fear of going into a butter induced coma but this recipe has a surprisingly low amount of butter for Paula!
Things I learned from this one: Peeling apples is not a skill I possess. Def going to have to work on that! Also it really isn't worth trying to make your own pie crust because the pre-made dough you can buy at the grocery store is totally fine!
Ingredients
- 8 Granny Smith apples peeled and sliced
- 2 tablespoons unsalted butter- chilled and sliced
- 1 1/4 cup sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon ground nutmeg
- 2 tablespoons flour
- 1 egg- lightly beaten for egg wash
- cinnamon sugar for dusting
Preheat oven to 400 degrees.
Peel apples. Thank god for mothers because I was seriously struggling with this!
Like I said about my mother's kitchen, she literally has EVERYTHING, including a thing that slices your apples for you
Slice apples thinly.
Combine cinnamon, nutmeg, sugar and flour.
Add spice mixture to apples and stir until they are coated.
Roll out one disc of dough and dust with cinnamon sugar.
Lay over pie plate, cut off any excess
Pour apples into pie pan and spread evenly.
place slices of butter on top of apples
Roll out second disc of dough large enough to cover pie with an overhang and dust with cinnamon sugar.

Place over pie
Brush on egg wash and sprinkle with more cinnamon sugar.
Place on baking tray and bake for 50 minutes until golden brown and bubbly.
I am terrified for the day that I might actually have to deal with an entire turkey on my own!
