An oatmeal pancake can solve almost any problem" ~Christie Catan
Very few things scream childhood for me more than pancakes. But not just any pancakes mine have to be oatmeal pancakes. Whether it was a Saturday after a sleepover, before a soccer tournament or before school my breakfast of choice from early childhood to now has always been oatmeal pancakes.
I def cannot write a blog about oatmeal pancakes without giving a shout out to the Catan family, they are to blame for my addiction. As children we used to have oatmeal pancake eating contests, and while Christie and Cat usually put me to shame (sometimes eating twice as many as me) the pancakes will always have a fond place in my heart. Although I thought for the longest time that there was a secret ingredient or a secret recipe it turns out I was wrong. This is probably the easiest recipe I have posted thus far.
Ingredients (makes 4-6 pancakes depending on size and thickness):
- 2 cups of bisquick
- 1 cup oatmeal
- 2/3 cup milk (add more for consistency)
- butter
- syrup
mix thoroughly in large bowl.
scoop batter onto griddle or skillet. cook until bottom is golden then flip. when they are done add butter.
one of the hidden gems that I love to use as a college kid is precooked bacon. It takes 15 seconds to make in the microwave and is just as good (if not better)as real bacon!
