Mac and Cheese It's Easy as ABC...

One of my all time favorite things to eat as a kid was my grandmother's mac and cheese. She always made it from scratch meaning it tasted wayyyyyy better than anything out of a box. Some pretty decent boxed mac and cheeses have been released since I was a child, that are actually quite delicious. For the most part I am not a start from scratch kind of gal esp when there is a box alternative, however tonight I decided to try it the old fashion way.


this is my own variation of a recipe I found on a blog called macaroni and cheesecake. It was cheap, easy and reminded me of the homemade mac and cheese from my childhood.







Ingredients (makes about 2 servings)
2 cups uncooked pasta
1 1/2 cup milk (I used skim)
1 1/2 tablespoon of all purpose flour
1 1/2 cups of shredded sharp cheddar cheese
1/2 teaspoon of salt
a few dashes of black pepper, cayenne pepper and paprika (for taste)






cook pasta in a medium sauce pan as directed on box (I usually add a little bit of butter for taste), strain and set aside.

In the same pan combine milk and flour, stir with whisk until mixture thickens (about 2 minutes)

add cheese, salt and spices

Continue to stir until cheese is fully melted. Stir in pasta, add more seasoning as needed. Let stand on low for a few minutes.
